Wayne heads up operations and culinary for Ennismore’s in-house F&B development and concept studio. Wayne is responsible for the studio's day-to-day operations, oversees F&B on 100+ operating hotels, 14 lifestyle hotel brands and 300+ venues, brands and concepts in the pipeline. He also drives Chef partnerships, operations and business development.
A hospitality veteran, Wayne has led and operated award-winning restaurant groups, independent concepts and major hotel groups such as Marina Bay Sands, Michelin-starred Gypsy Chef Group, Rockpool Dining Group, SBE/Morgans and its subsidiary Disruptive Restaurant Group's strategy globally.
